Chefs, Farmers and Fishermen all get their inspiration from the Land and the Sea. We are so lucky to live in Ireland where we have such beautiful landscapes and water, giving access to amazing raw ingredients. It is because of this that we can get the best ingredients that our suppliers can give us, and this shows in our food. In Copper and Spices we use only Local and Irish.
Our Chicken comes from Manor Farm, Lamb from Joseph Regan Enfield, Fish is from Connollys Navan, Goat from Paul Davis Galway and our Pork is from Newtownmoynagh Trim. Our Ice Cream is from Bernie Burks Jersery Cows, only over the road from us. Our Sticky Toffee Pudding comes from Whats for Pudding? another award winning local producer. All our other desserts are make in our kitchen by our very talented chefs. Our Coffee is Ariosa Coffee from Ashbourne. All our beers are local and Irish, Boyne Brew House, Dan Kellys, Francisan Well and Bru. We grow our own herbs and vegetables, and we grind our own spices.
